Orange County Register: To help shed light on food safety, El Pollo Loco let The Orange County Register observe its produce safety procedures, and food safety experts say the chain's system is among the toughest in the industry.
 
"They're proactive in every way, from the plant facility all the way down to the field," said Brian Mansfield of Primus Labs, a food safety auditor whose roster of clients include El Pollo Loco, Albertsons, Safeway and Carl's Jr.
