Big Juan's tacos y burros, a new quick-service Mexican concept, will open its first-ever restaurant in Tucson, Ariz., this spring. The first location is set to open April 21 and the second location will open in May.
The concept was founded by the Catalina Compadres restaurant group – a team of four restaurant veterans with a combined 150 years of experience in owning and operating both quick-service and full-service restaurants.
"Launching Big Juan's in Tucson first was an obvious choice for me as my family has roots and history in Tucson," said John Schwimmer, co-founder of Big Juan's tacos y burros and CEO of Catalina Compadres. "What we have created in Big Juan's is a style of Mexican food and service that doesn't currently exist in the Tucson marketplace. All of our recipes use fresh ingredients and are made from scratch continually throughout the day, just as if it was prepared in the customer's own kitchen."
Big Juan's menu will include burros – some of which weigh more than a pound – street tacos, traditional Mexican breakfast items all day, authentic style fish, shrimp, enchiladas, totopo salads, pozole, tortas, chips and dips and Mexican juices.
Schwimmer added that Big Juan's food will be made to order and customers will be served only USDA-choice beef and fresh grilled carne asada, polla asado, pork and shrimp.
Prices for menu items range from $3 to $10. Big Juan's also offers customers a complimentary salsa bar, featuring a variety of homemade salsas and fresh vegetables.
Big Juan's will be open 24 hours a day.
