Before a brand can deploy a catering-order management system and supporting technologies, it must align its business framework, business logic, workflow and best practices, said Erle Dardick, catering expert and co-host of The Restaurant Catering Workshop, Oct. 15-16 in Denver.

The 1.5-day event, which starts as the annual Fast Casual Executive Summit, Oct. 13-15, at the Sheraton Denver Downtown Hotel in Denver ends, features experts teaching restaurant operators how to create a proper catering solution.

Gracie Prasanson, VP of sales at Jason's Deli, Jenn Saunders-Haynes, the director of global catering for Subway, and Big Chicken COO Sam Stanovich are three of those experts. They'll discuss how they developed catering programs focused on sales growth while owning customer data and identifying the metrics and behaviors required to measure success.

They'll also explore how to drive and manage first- and third-party catering sales and offer an outline for investments needed to support that revenue.

"Attendees will leave with an actionable framework and ROI plan to implement into their organizations," Dardick said.

The workshop will also feature a roundtable discussion starring industry leaders, such as Subway and Jason's Deli, who have implemented the business framework discussed during the event.

"These leaders are building B2B sales on the backbone of their technology infrastructure," Dardick said. "We'll hear stories about their investments and pursuits of internal strategic alignment. We will listen as they guide attendees to a vision of scaling sales and profits with catering and B2B transactions and how their pre-pandemic investments set them up for not only survival but acceleration of their off-premises transactions in a post-pandemic world."

Other speakers include:

  • TJ Schier, CEO, Smart Restaurant Group.
  • Tracy Avolio, chief sales officer, New Catering Connections.
  • Jason Schlenker, EVP, Inktel Contact Center Solutions.
  • Samir Wagle, founder and CEO, 11:11 Partners.
