Del Taco is launching an 18-month overhaul, titled "Project Sunrise," aimed at reversing recent menu changes and addressing negative guest feedback.

The initiative follows months of planning across the company's marketing, operations, and sourcing departments. The framework focuses on returning to original preparation methods and expanding the brand's reach into new markets, according to a press release.

"Project Sunrise is about getting back to what makes Del Taco special and positioning the brand for future growth with a roadmap that gives us the focus and accountability to deliver to guests a new brand promise, while strengthening our foundation and creating meaningful momentum for a successful and sustainable future," Anil Yadav, CEO of Yadav Enterprises, which recently acquired the brand, said in the release.

Returning to the 'Del Way'

A primary focus is the restoration of the "Classic Burrito" line. The company is reverting to original product names and the signature open-end folding method for several items, including the Del Combo Burrito and the 8 Layer Veggie Burrito.

Ulyses Camacho, Del Taco's chief transformation officer, said the move is a direct response to customer dissatisfaction regarding ingredient changes made over the last two years.

"We've listened closely to our guests, and the message is clear: deliver the food they know and love with the consistency and quality and value they expect; simplify where it matters and bring bold innovation that excites," Camacho said in the release,

The chain has also brought back its "Jack'd Up" menu, featuring Spicy Jack cheese, starting March 3.

Future Expansion

Beyond menu adjustments, the company is looking toward physical growth. Del Taco expects to open seven new locations in 2026, including its first foray into South Carolina. Further deals are in place for 10 locations in Indiana and five in Kentucky, while the company explores reopening shuttered sites in Georgia.

"Project Sunrise gives us the structure to move simultaneously with urgency and discipline," Noah Chillingworth, CMO for Del Taco, said in the release. "We're taking action based on the feedback of our guests and implementing product and ingredient improvements for core items."

Del Taco operates nearly 600 restaurants in 17 states.
