Jimmy's Egg to open in Lubbock

Jimmy's Egg Franchise Group, Texas Egg Partners LLC, is set to open its fifth location in Texas on 114th St., in Lubbock on Sept. 14, a news release said. The store will be the second to open in the city in under a year for the group.

The store, which seats 122 people and employs 30, is the chain's 64th restaurant. Texas Egg Partners LLC is a joint venture between Klepper Capital Group LLC and Jedi LLC.

The first Jimmy's Egg opened in Oklahoma City in 1980 and began franchising in 2008. It will open five to eight stores over the next 12 months in Kansas, Oklahoma, Tennessee and Texas.
