Operators need to push through tough economy

St. Cloud (Minn.) Times: As casual-dining spots are closing around Minnesota, quick-service restaurant operators are hanging on amid high gas prices and rising food costs.
"It's one of the most challenging environments for restaurants that I can recall," said David Siegel, executive vice president of the Minnesota Restaurant Association.
He said the increased costs and closures seen in the St. Cloud area are happening statewide and nationwide. So, restaurateurs will need to "push through" the next six to 12 months, which he predicts will continue to be difficult economically.
