Study finds QSRs fry oil-switch cut trans fat but raises cholesterol

A study from the University of Hawaii has found that quick-service chains are more than three times likely than independent restaurants to cook their french fries in corn oil, which is higher in saturated fats than other vegetable oils, according to Bloomberg.
 
McDonald's, Burger King, Wendy's and Arby's switched to using vegetable oil in their fryers to eliminate trans fat, but the study points out that by using corn oil, they have chosen an oil that raises cholesterol.
