Taco Del Mar gets cool

Colorado-based Taco Del Mar is proving how cool it can get this summer with new shrimp ceviche dishes, include a citrus shrimp ceviche taco salad and shrimp ceviche tacos, a news release said.

The salad comes in a baked taco salad shell with chilled shrimp marinated in lime juice and tossed with pico de gallo and cabbage, guacamole and house-made cilantro lime vinaigrette. A side item with chips is also available. The tacos with shrimp ceviche can be customized with lime, cilantro or serrano peppers.

"Shrimp ceviche is a delicious way to embrace our seafood roots and integrate an even wider variety of fresh, quality ingredients into our stellar menu," Chef Mike Gieseman, director of Culinary and Innovation for the brand's parent company, Rego Restaurant Group, said in the release.

The LTO is available now at the brand's 26 locations in and around Seattle.
