Taco Time adds the little tuber with the big health benefits to its menu

Jicama — sometimes called a Mexican turnip or yam bean —  is really having its day. For proof of that, look no further than TacoTime. The chain is putting the crunchy little tuber on its menu as an LTO this summer to capitalize on its recent popularity. Starting this Wednesday at the chain's locations, diners can order a chicken jicama burrito that incorporates crunchy slices of the tuberous root with salsa, black beans, spinach leaves and white meat chicken with a poblano sauce in a tortilla, according to a company press release. 

"This burrito is unique because of the jicama, which is a root vegetable typically used in Mexican cuisine to add a light crisp crunch," said Julie Hoefling, director of marketing for TacoTime. "The addition of this special ingredient sets it apart and brings a traditional element to the overall flavor of the chicken jicama burrito that customers are going to love."

Jicama, pronounced "hee-comma," has become a little darling of foodies everywhere for its healthful properties and low calories. It's typically eaten raw or lightly sauteed and has a hint of sweetness that some describe as tasting like a raw green bean. It is growing in popularity also due to the fact that it contains oligofructose inulin, a so-called prebiotic that is actually consumed by good gut bacteria, which are proving to be very important to good health.
