Planning ahead key to one-day promotions

A Popeyes operator learns that even the best preparation doesn't compare to actually going through the paces.

Handling a one-day promotion that quadruples daily sales can be a challenge. Osasu Osaiga, director of operations for Popeyes Louisiana Kitchen franchise, North Preston LLC, in the Louisville, Ky., market, made sure his store was well prepared.
 
Still, he didn't expect hour-long waits in the drive-thru as consumers overwhelmed his five stores for the Popeyes Pay Day promotion, which offered an eight-piece mixed chicken for $4.99.
 
His intent was to serve fresh-cooked chicken to customers, so he did not cook any ahead of time. That plan worked well until after lunch, when long lines formed in the store as well as the drive-thru. The stores did their best, pushing out 1,200 pieces of chicken an hour — a typical day's worth of output.
 
Still, Osaiga was pleased overall with the day and will gladly participate in any such future national promotions, he said.
