Zaxby’s Joins CloudKitchens - 921 W Commerce St to Continue Growth in Dallas, TX

Zaxby’s, the fan-favorite fast-casual brand known for its Chicken Fingerz™, Signature Sandwiches, and iconic Zax Sauce®, has officially opened its first-ever ghost kitchen in Dallas, Texas, marking a bold new era for the brand's delivery-first expansion.

The new ghost kitchen, powered by CloudKitchens, serves the urban core of Dallas—including Uptown, Deep Ellum, Downtown, and SMU—with hot, fresh Zaxby’s favorites available exclusively through major food delivery platforms and the Zaxby’s app.

The project is spearheaded by Jonathan Ellis, a third-generation franchisee whose family has been shaping the quick-service restaurant industry for more than 60 years with McDonald’s.

“We’re building the Zaxby’s of the future—where customers get the same bold flavor they love, but on their terms, wherever they are,” said Jonathan Ellis, “Dallas is the perfect market to pilot this model—fast-paced, tech-driven, and hungry for quality.”

A Franchise Legacy

The Ellis Family represent three generations of franchise operators, with Jonathan following in the footsteps of his grandfather, Rodgers Ellis and father, Brian Ellis, both longtime McDonald’s operators. The Ellis’ built a reputation for high-performing restaurants, community engagement, and operational excellence across Texas.

In 2024, Jonathan and Brian shifted to Zaxby’s, where they now own and operate 10 locations across Dallas–Fort Worth and Houston. The group is on a mission to open or acquire 100 locations by embracing modern formats like ghost kitchens while staying rooted in the family’s hospitality-first values.

With constant modernization and competition within the restaurant industry, Commerce Fork Food Co will allow for Zaxbys to reach more customers without the investment in a traditional brick-and-mortar restaurant. The brand’s inclusion in this ghost kitchen location, near Downtown Dallas and its popular hotels and attractions, is projected to attract many new and existing fans.

Delivery-Only, Flavor-First

Operating from a CloudKitchens facility near the Design District, the ghost kitchen allows Zaxby’s to serve its most popular menu items—like the Signature Chicken Sandwich and loaded Zalads—without the overhead of a traditional dine-in restaurant.
