Restaurant incubator ready for new chef class

Smallman Galley, which bills itself as "the nation's first restaurant incubator," has announced that it is accepting applications through the end of the month for its second class of restaurateur-chefs. The Pittsburgh-based restaurant testing-ground and bar program opened this time last year as a launching pad for undiscovered chefs and their restaurant concepts.

According to a press release, the four chefs selected for the 18-month Smallman program will spend the first 12 months of their tenure honing their kitchen skills and learning business practices associated with restaurant operation.

During the final six months, each chef runs one of four independent kitchens in the galley's working restaurant, which serves up to 200 diners six days a week in Pittsburgh's Strip District. During this time, the chefs have the opportunity test and refine their concepts and put into practice the business operation skills they've learned. 

"For talented and ambitious chefs, Smallman Galley provides a low-cost, low-risk, high-visibility opportunity to showcase their talent and obtain the required expertise in owning and operating a business," Smallman Galley co-founder Tyler Benson said in the release
