Restaurant turnover has skyrocketed annually industrywide, with quick serve restaurant segments seeing rates as high as 144%, according to the National Restaurant Association. The fry station is disproportionately responsible for that number. 

But new data from Miso Robotics shows that automating it doesn't just stop the losses, it can add millions of dollars annually in new profits for multi-unit operators.

Every employee replacement costs an operator roughly $6,000 once recruiting, onboarding, training, and lost productivity are factored in, per Cornell's Center for Hospitality Research. For a single location losing ten employees a year, that's $60,000 disappearing before a single dollar of new revenue comes in. Multiplied across a portfolio, turnover stops being a rounding error and becomes one of the largest hidden costs on the books, with a 20-location operator absorbing roughly $1.2 million annually in turnover cost alone.

Automation is the answer. A single automated fry station can generate $6,400 or more in new monthly profits through labor savings, faster throughput, and reduced waste – roughly $76,500 annually per location, according to Miso Robotics deployment data. Scaled across a portfolio: 10 locations can see $765,000 in annual impact, 50 locations $3.8 million, and 100 locations $7.65 million.
